Another change I made was to the broth.  I used 5-8 juice in the broth.  I mainly did this because my husband likes tomato sauce, simply he doesn't like chunks of tomatoes, so I went a little light on the bodily tomatoes in the recipe and made up for information technology by adding 5-eight juice instead of h2o towards the stop of the recipe.

I too added a modest tin can of greenish beans, because I idea it sounded adept, although my mom says that Grandma never put green beans in her soup.

Ingredients

  • 2 pounds chuck roast
  • two tablespoons extra virgin olive oil
  • 1-2 teaspoons seasoned salt
  • 1 soup bone
  • 6 cups water
  • 2 (xv-ounce) cans of petite diced tomatoes
  • two medium white potatoes
  • 1 cup chopped carrots
  • one cup frozen corn
  • 1 cup green beans (I utilize canned)
  • 1 loving cup slaw mix
  • 1/2 cup white rice
  • 1/2 loving cup chopped celery
  • 1/2 onion, diced
  • 2 teaspoons minced garlic
  • common salt and pepper to taste
  • two cups V8 juice (divided)
  • half-dozen ounces Amish egg noodles

Instructions

  1. Trim any excess fatty from roast and season with seasoned common salt.
  2. Warm olive oil in a large dutch oven (or heavy bottom pot), over medium-high heat. Advisedly add roast and sear meat until browned on all sides.
  3. Once meat has finished browning, add tomatoes and 6 cups h2o (just enough to cover meat). Bring to a boil then adjust heat to maintain a depression simmer. Cover and cook until meat is tender, almost ii hours. While meat cooks, chop vegetables.
  4. Remove meat and shred with a fork.  Return meat to pot along with vegetables, rice, garlic, salt and pepper and one cup of V8 juice. Add noodles and remaining V8 juice + water (if needed- if you lot want more liquid) and simmer for another hour or more. Remove soup bone and discard.

Notes

If you want to freeze this soup, freeze the soup without noodles added, then when you are ready to serve, add the noodles and simmer until noodles are cooked. This will keep the noodles from turning mushy.
